The Restoration Stone is for occasional use to bring back the original cutting angle. It leaves a medium finish to the edge. Messermeister designed this two-sided combination water stone to be an economical solution for infrequent sharpening. The 400 grit side will correct slight edge flaws and the 1000 grit side is excellent for both finishing and maintenance. This is a great stone to have in the kitchen for those who sharpen only a few times per year.
